Down Home Creole Cookin’ Catering Service (DHCC) is located in Edgard, Louisiana. We provide high quality food service mainly to the New Orleans and Baton Rouge Metropolitan Statistical Areas, however, we are capable of servicing specific activities beyond those areas. As the name implies, our dishes carry a creole flavor along with traditional American flare.
The sole-proprietorship business is owned by Mr. Bertrand A. Bailey, Sr, a resident of Baton Rouge, Louisiana. Mr. Bailey has over forty-two years of experience in the food service business, having worked at every level between bus boy and District Manager and for family owned single site restaurants to national franchising chains (See Resume’).
DHCC was established in 1998. Our major focus has been private catering of weddings, picnics, and other dining events in addition to operating food booths at various festivals. Some of those have included the Swamp Festival, Essence Festival, Andouille Festival, New Orleans Jazz and
Heritage Festival, Baton Rouge International Heritage Festival, Lundi Gras, Soul Food Festival, and the Livingston Parish Fair. From its inception, DHCC ownership committed to investing in the proper equipment, include service tools, heat holding equipment, refrigeration equipment required to produce the highest quality products for its clients. That commitment gives DHCC an insurmountable edge over competitors who cannot maintain food quality from preparation through service. Over these twenty-five years, the business has established a solid reputation of on-time delivery of fresh high-quality and delicious culinary fare to festival attendees and catered event guests.
DHCC has extensive experience in serving clients of varying age groups such as the Center for Energy and Environmental Studies (Camp Cee’s) program for youth at Southern University, Winbourne Elementary School, Glen Oaks High School athletic teams, the Southern University
Foundation for it’s tailgate activities, Blue Cross Blue Shield, various churches in southeast Louisiana, fraternities and sororities.
DHCC operates in a sound fiscal manner with resources capabilities which have allowed us to produce a booth at the New Orleans Jazz and Heritage Festival for the past twenty-three years. This one event requires thirty-five to forty-five thousand dollars ($35,000 to $45,000) in
resources before the first sale is made.
Our staff is fully trained on Health Department regulations, licensed to do business in Louisiana and carry substantial liability insurance. A copy of our current Louisiana Department of Health/Office of Public Health Permit and City of Baton Rouge-Parish of East Baton Rouge
Occupational License are attached. The scope of the activity called for in the proposed contract is not expected to surpass the threshold requiring a surety bond. If the total contract exceeds the threshold, a surety bond will be provided with verification available from the insurance agent shown on the attached Certificate of Liability Insurance.
Our menu features a variety of mouth-watering dishes, from classic burgers and fries to more exotic options like Gumbo and Jambalaya. We use only the freshest ingredients to ensure that every bite is packed with flavor.
